Instant Ice Cream - Properties and changes of materials

Ice cream is basically droplets of fat from milk suspended in millions of tiny crystals of ice, fluffed up with tiny pockets of air.

This activity shows you how to make the right mixture, then make it cold enough to create those ice crystals without the aid of a freezer. It also reveals how salt and ice make a chilling combination.

What’s the science?

Pure water freezes at 0 degrees Celsius. Add salt and the freezing point drops by a few degrees. When you add salt to the ice in the outer bag, the ice (at 0°C) is now above its freezing point – so it begins to melt. Melting requires energy, and in this case that energy comes from the flavoured milk mixture in the inner bag. Ice crystals start to grow in-between the tiny globules of fat in the milk and bubbles of air, causing the milk to freeze and change state from a liquid to a solid.

Believe it or not, you can make ice cream without a freezer.

Think and talk about…
  1. What do you see happening to the ingredients?
  2. What do you think the salt is doing?
  3. How could you find out more?
  4. How does the finished product compare with shop-bought ice cream?
Investigate…
  1. Can you make the ice cream freeze faster?
  2. Try altering the amount of salt or how much you shake the mixture.
  3. Try different ingredients – do they behave in the same way?

I want to tell you some important things

Dear Year 5 Class,
I am writing this to you all because you are having to miss school because of the Covid 19 virus that is spreading around, and your parents and carers have had to keep you at home as part of keeping everyone safe.
Yesterday may be your last day at school for a long time. When you come back lots of things will have changed. It won’t be Spring any more. You might come back into the next year group. There might be new teachers and new friends to get to know. BUT... lots and lots of things won’t change.
Your school grown-ups will carry on thinking about you every single day. We will laugh at the funny things you have done, and will wonder if you are still getting better at your handwriting and what you are reading now. We will hope you are doing the very important job you have been given to help stop the spread of Covid 19 – and are washing your hands!
We will carry on planning learning activities for you to do. We will always care about you even though we won’t be able to see you every day for a while.
I want to tell you some important things.
- Don’t be frightened. You may hear some things that you are worried about, but these are not worries for you. Tell someone you trust about your worry and let them look after it for you.
- The children who are going to be coming back to school are not more special than you. We are going to be looking after them for a while because their parents can’t, because they are doing some particularly important jobs right now.
- There are some good things happening in amongst the bad things.
- There is less air travel and as a result the environment is getting a bit of a rest, and, who knows, maybe we can work out new and better ways of doing things in the future because we have had to.
- People are talking to each other and offering to help each other more. That is a very good thing, make sure you do that too.
Even though you will be missing some school, you can still learn and try your best at everything you do. You are a very special bunch of people.
Please keep singing, playing, making, drawing, writing, problem-solving, and learning about our amazing world. We are having an adventure and like all real adventurers, we have to be brave.
Miss Matthews
